Before the tomatoes soften
For three weeks each year, the tomatoes arrive faster than we can serve them. Some go straight to the dining room. The rest become clear water, vinegar and a preserve for winter.

What the dining room keeps
A restaurant room records use differently from a kitchen. Linen softens. Brass darkens. Oak gathers marks at the exact height of a chair. We chose materials that improve through service.
